

Fish Fry Kerala Style Recipe | Meen Varuthathe, any variety of fish marinated with some indian spices and shallow fried.
Being a coastal area, fish is one of the staple food of every household in Kerala. Atleast a fish fry you will find it everyday for the dine. Because of the fact that this Kerala Style Fish Fryis so easy to prepare and comes handy whenever you are out of side dishes to be served or even you are feeling too lazy or busy to prepare some items extra.
Atte Ka Halwa or Atte Ka Sheera is a popular north indian dessert. Main ingredients as wheat flour, sugar and ghee. It is also served as prasad in Gurudwaras to all the devotees. In my hometown, if you happen to pass the Gurudwara during any festive, they will compel to have one serving. Yes!, they won't even leave the vehicle riders. And Damm! you should taste those treats, it will be super delicious, whether halwa or any drinks.
In this post I'm not going to share the Gurudwara style of Kadaa Prasad, rather how I made it recently, a healthier version of it.
Imagine how it feels when you are back from a long comforting holidays with your parents, doesn't matter how hot it is and you suddenly have a long list of to dos, including house chores and settling back to your usual life. This time we had a long road trip, but wasn't exhausted until we reached bangalore. All these led us especially me to a total energy loss. I needed instant energy to do things smoothly and was craving badly for something sweet, an energy booster. For that fact, I would love to be a bike rider, they carry packs of sweets to munch on their way, isn't it cool?? LOL
One more condition to make this recipe was I don't wanted to consume any more calories, as I already gained around 4 kgs. So, if you are craving for a healthy sweet, just go for this one. I did'nt have much dates, so added few. You can add more or less of sweetner used in this recipe. I will later update the post with step by step photos. How to make Atte Ka halwa or Atte Ka Sheera:
- Clean dates 2-3 times in water to remove all the dirts. Deseed and cut it in half. Soak it in 1/2 cup of hot water for about 30 minutes prior making the halwa. Grind it to a smooth paste. Keep it aside.
- Heat ghee in a kadai or a pan. Fry cashews or other nuts of your choice till golden brown and take out and keep it aside.
- Add wheat flour to the ghee and start mixing well till all combined.
- Cook this till the wheat changes its colour to dark golden brown. Keep mixing to avoid burning. It will take around 7- 10 minutes.
- Meanwhile boil the said amount of water (excluding the amount used for soaking dates) in a seperate pan. Add grated jaggery.
- When the wheat ghee mixture is ready and water also boiling with the jaggery melted. Add the boiled water to the wheat mixture using a sieve to filter any dirt particles. Add crushed cardamoms and dates paste.
- Start mixing till well combined. At the starting you will feel the water is too much, but it will get absorbed in no time. Make sure no lumps are present.
- I garnished with fried cashews and roasted melon seeds. Serve it warm.

Prep Time: 30 minutes
Cook Time: 20 minutes
Servings: 4 people
Measurements used:- 1 cup = 250 ml; 1 tbsp = 15 ml; 1 tsp = 5 ml
Ingredients:-
3 cups Water For soaking dates and making halwa
2/3 cup Ghee Clarified butter
2/3 cup Jaggery grated
10 nos Dates
6 nos Cardamom crushed
1 pinch Salt
Nuts for garnishing
Instructions:-

Sweet Sour Mango Chutney- prepared with raw mangoes, jaggery and few indian spices. My mom used to make this every year during summer, as raw mangoes will be available in plenty. Though we have mango trees, we never get a chance to taste the ripe mangoes, thanks to monkeys coming home and making tantrums. Finally, we end up plucking all the raw ones. And what we make with these big batch of raw mangoes are Raw Mango Chutney, Aam Ka Panna and this Sweet Sour Mango Chutney. And yes!, Mango pickles which she makes very rarely.

Mango Chutney orManga Chammanthias called in Malayalam is a spicy tangy chutney. Prepared with raw mango, coconut and commonly available ingredients, goes very well with rice or rice poridge.
As summer is in full swing, welcoming mangoes, it would be unfair not to post this much loved Aamras recipe. So, sharing with you the simplest and minimalist dessert recipe.
Aamras orAmras, as called in Hindi, literally means 'mango pulp'. It's a popular dessert from North India. Served with chapati or puri during festive occasions as a breakfast. It can be simply sweetened and served or can be flavoured with ghee, kesar or milk.

INGREDIENTS:
- 1 no ripe mango (any variety)
- grated jaggery or honey more or less as needed
- 2 no / a fat pinch cardamom pods, powdered
- 1/4th tsp ginger powder (optional)
- milk as per the consistency needed (optional) / 1 tbsp Milk cream
How to make aamras / amras / mango puree:
1. Wash and peel the skin of the mango. Cube it.
2. Add all the needed ingredients into a blender and make a smooth paste.
