Palak Fusilli Pasta or Spinach pasta recipe with step-by-step photos. Easy to make and a kid’s lunch box idea using spinach puree and cream. as the base sauce.
Palak Pasta is one of our family favourite, especially li’l E’s. It’s a healthy dish and good for picky eaters. If in case, your kid does’nt like the appearance of green leaves in their food, making a paste is a good alternative.

It is less messy and can be packed for your kid’s lunch box. This is also a good way to include more greens to your kid’s menu. You can use any other kind of pasta. I have used fusilli, as these kind hold the sauce very well.

Servings: 4

Measurements used:- 1 cup = 250 ml; 1 tbsp = 15 ml; 1 tsp = 5 ml

Ingredients:

2 cups Fusilli Pasta / any variety
1 cup spinach; tightly packed
1 no. Onion big; roughly chopped
3 no. Garlic Cloves; big
1/2 cup Milk
2 tbsp Cream; optional
1/2 tsp Black Pepper

Instructions:

1. Cook pasta. In the meantime, heat oil in a pan. Saute onion and garlic till translucent or for 5 minutes. Add chopped palak (I use up the stalks too, it’s full of fibre) and cook open until palak wilts. let it cool down. In this step, you can add green chillies in place of pepper and grind together.

2. Grind the palak – onion mixture till you get a smooth paste. 1-2 tablespoon of water can be added.

3. Again heat the same pan. Pour a teaspoon of oil and add the paste. Let it cook for 4-5 minutes till the raw smell of palak goes off.

4. Pour milk and cream. Add pepper and salt. Mix well. Add the cooked pasta. Mix well till the pasta are well coated. Cover and cook for another 1-2 minutes on low flame. Serve hot.
