Puran Poli / Holigeis a sweet flat bread, mainly prepared in festive occasions like Diwali in Maharashtra.. This sweet dish is called by different names in different parts of India. Puran Poliin Maharashtra, Vedmiin Gujarat, Boliin Kerala and Tamil Nadu, Bobbatlu / Bakshaluin Telugu, Obbattuin Karnataka. Ingredients might also vary, like in Maharashtra, its prepared with chana dal while in Gujarat, tur dal is used. However, the main ingredients are wheat flour, jaggery, yellow gram and cardamom. In Tamil Nadu, you will get to buy this poli, which is made of all-purpose flour.

This sweet was introduced to me by my college bestie, when she brought it for her friends as to share the Diwali sweet. This is usually served after the main meal or as an evening snacks. As Diwali is nearing, I thought of preparing this as my first diwali sweet for you guys..

 

Lot of variations are added to this dish. Like some people use moong dal or other lentils instead of using only tur / chana dal. Some add coconut or even dates as an additional stuffing ingredient. Some people roll it into thin polis, while others thick.  Here, I have used fennel and a pinch of nutmeg powder. Try it out and let me know how it comes out for you..

How to make Puran poli, Bakshalu with step by step photos:

1. Take a pressure cooker. Add dal, water, salt and turmeric. Close the lid and cook for 5-6 minutes. Lower the flame after the first whistle.

2. Make a soft dough my mixing all the ingredients under ‘Dough’. Add water little at a time. Knead for 5-7 minutes. Keep aside.

3. Open the cooker lid. Heat on low flame. Add the remaining ingredients under ‘stuffing’. Keep stirring till all the water is evaporated(if any). And the mixture seperates easily from the bottom of the cooker. If you wanted, can add few drops of ghee. Let it cool down completely.

4. Lets start making polis. Divide the dough and stuffing into 6 equal balls.

5. Roll out a ball into a 4-5 inches of disc. Place a ball of stuffing in the middle. Seal with the dough around. Dust little flour and again roll into a bigger disc.

6. Cook on griddle. Smear some ghee on top. Flip and cook on both sides till golden brown. Repeat the steps with the remaining dough.
