Eggless Banana Bread Pudding Recipe - Indian Style

A simple eggless bread pudding for all pudding lovers. Eggless happened by chance, as I was out of eggs. I, actually entered kitchen to make my mom's pudding recipe, which she used to make often and we as a kid used to love it a lot!!..Mainly, she used to make it without bread (will post it's recipe someday). As bread was rarely bought and we were more fed on soft chapatis. Can't really get bored of it. ;)

So, where I was????? Yeah, I entered kitchen    Ohh!! I already told you, I was out of eggs. And , I had these bananas, which I actually bought for making this Banana Bread. I don't know, why am I so obsessed to making Banana Breads. Every time, I pass by the banana shop, I can't control. I feel like, I should buy and keep it. Anyway, I used those bananas. If you want a bit of crunchiness, nuts will help you. Or else you can just omit. And rest is the recipe. You can try it out and let me know how it came out for you..




Eggless Bread Banana Pudding Recipe - Indian Style

How to make eggless bread banana pudding:

1. Grind sugar and cardamom seeds into a fine powder.  If you have castor sugar or ground sugar and store-bought cardamom powder,  you can be use them directly.Make a smooth paste using 2-3 tbsp milk and custard powder. There should be no lumps.

2. Pour remaining milk in a bowl. Add, sugar - cardamom powder,  custard paste, salt and whisk it well.Grease the baking tray with butter. Arrange and fill one layer with bread slices. Top it up with banana slices and then almond chips. Layer it again with remaining bread slices and top it with almond chips.

3. Spread the crushed peanuts on top. Slowly pour the milk mixture on top, covering all the bread slices. Make sure you whisk the milk and taste it for enough sugar before you pour.

4. Preheat the oven. I made it sit for 15- 20 minutes, gently pressing the bread slices in between. If you can't wait, you can skip this step.Bake it @ 140 for 20 minutes.

5. Serve warm or refrigerate if you like chilled version.
