Biscuity Oats Dates Cake Recipe

I have nostalgic memories when thinking of oats. Oats was introduced to me by my dear roommate, JJ, when I was studying and staying at a convented hostel. I think, she had 2 big packets of oats, each weighing around 2 kgs.. And she knew she is not going to finish it off alone. Or she must have got really bored eating oats. Thus, there I gave her a company..


And, as obvious, even I had to feed on oats almost daily, because that time I did'nt have time to think or try any recipes.. Oats porridge was the simplest breakfast I can ever have. Just soak it in some hot milk, drop in some fresh fruits and there you have it!.. your best quick breakfast ready..  I doubt, I have ever used sugar in it.. The sweetness of banana and dates were enough..



While eating this cake, you will get the same feeling of eating one of your crunchy choco biscuits. It is super crumbly. I had hard time cutting it in shapes. Slight crunchiness of  roasted nuts here and there. And few small bites of dates. I really wanted to use up the oats which was in my pantry for a while. It is not so often, I make dishes with oats, though my inner-self want to.

Biscuity Oats Dates Cake Recipe

How to make biscuity oats dates cake:

1. Coarsely powder the oats. keep it aside.Roast nuts in a pan without oil for 1-2 minutes. Pulse it and keep aside seperately.
2. Beat eggs for 2-3 minutes or till it gets frothy as shown in the picture.



3. Grind sugar, nutmeg and cinnamon into fine powder. Add this to egg mixture. Add oil and essence. Beat it for another 2 minutes.

4. Take a separate bowl, add oats, baking powder, salt. Mix all the dry ingredients well. Add this to the egg mixture little by little. Just incorporate everything well using a spatula.

5. Lastly add all the nuts and dates and fold in together moving in one direction. Pour it in the baking tray greased with oil and dusted with flour.

6. Preheat the oven @140. Tap the baking tray, in order to evacuate the air bubbles.  Bake @140 for 25 minutes. Let the cake cook down for 5 minutes. Take out the cake off the tray. Otherwise, the bottom of the cake will become soggy.
